Chocolate Valentine Truffles
Chocolate Valentine Truffles

1 1/2 lbs. (about 4 1/2 cups) milk chocolate, melted
1 cup whipping cream
1 1/2 teaspoons vanilla

Melt chocolate in microwave oven, pulling out to stir often or in double boiler on top of stove. Line an 8-inch square baking pan with plastic wrap; set aside. Place melted chocolate in a medium-size bowl. In a 1-quart saucepan, scald cream. Remove from heat and cool for 5 minutes. Stir in Vanilla. Beat chocolate with an electric mixer. Stop mixer and pour cream all at once over chocolate. Continue beating using rubber scraper for sides of bowl until mixture is smooth and blended. Taxes no more than 1-2 minutes. Pour into prepared pan and refrigerate 6 hours or until firm. Cut into 1-inch squares and serve immediately. Store in refrigerator.


Easy, Creamy Chocolate Pie
It just doesn't get any easier than this.

11/2 cups cold milk
2 packages (4-serving size) Chocolate flavor instant pudding and pie filling
1 tub (12 ounces) frozen whipped topping, thawed
1 prepared chocolate flavor crumb crust (6 ounces)
shavings from your favorite chocolate candy bar (if desired)

Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 1 minute. (Mixture will be thick.) Gently stir in 31/2 cups of the whipped topping. Spoon into crust. Refrigerate 4 hours until set. Top with remaining whipped topping. Garnish with chocolate shavings if desired.


Mocha Cappuccino Pudding Cake
Your Valentine will appreciate the extra effort you put into making this sumptuous dessert.

1 1/4 cup flour
3/4 cup sugar
2 Tablespoons cocoa
1 Tablespoon instant coffee granules
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup skim milk
2 Tablespoons melted butter

Filling:

1 cup sugar
2 Tablespoons cocoa
1 teaspoon instant coffee granules
11/2 cup skim milk, heated

Combine well the flour, 3/4 cups sugar, 2 Tablespoons cocoa, 1 Tablespoon coffee, baking powder and salt. Add vanilla, 1/2 cup skim milk and melted butter. Stir well. Spread into ungreased 8 x 11 inch pan. Combine 1 cup sugar, 2 Tablespoons cocoa, 1 teaspoon coffee granules. Sprinkle over batter. Pour 11/2 cups heated skim milk over all. Bake at 350º for 40 min. Wonderful served with ice cream or whipped topping.
