Great Groceries Recipe Center

Start the New Year off right by serving this delicious, but healthy, meal.

1 (8 oz.) package farfalle (bowtie) pasta
1 Tbsp. olive oil
1 zucchini, chopped
1 large onion, chopped
1 medium green pepper, sliced
2 cloves garlic, minced
Parmesan cheese to taste

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a skillet over medium heat, sauté zucchini, onion, green pepper and garlic in olive oil until tender. Toss pasta with vegetables and sprinkle Parmesan cheese overtop. Makes 4 servings.
